The 6.6” Santoku is made in Seki, Japan with a blade crafted from 66 layers of Damascus steel and a VG-10 stainless steel core. It’s full tang meaning it’s made from a single rod of stainless steel that extends from tip to handle. The result is a perfectly balanced blade that keeps its edge shape for longer. The steel is compressed and folded into layers, creating an eye-catching wave pattern that’s unique to each knife.
“Santoku” translates to “three virtues,” which some interpret as referring to the style’s ability to chop, slice, and dice, while others consider it a reference to the knife’s capability for cutting meat, fish, and vegetables. Either way, the tall blade and rounded nose make it a supremely versatile, multi-purpose knife that’s well-suited to all sorts of kitchen prep. Unlike the French version of our Santoku knife, this Japanese blade adheres to its traditional origins and doesn’t feature indentations on the side.
